Badusha Sweet Recipe


BADUSHA SWEET RECIPE


Badusha, this sweet is very popular in INDIA, soft and creamy - since my childhood this has been one of my favorite sweet it is a "Special" delicacy - it is also popularly known as "Badushahi" or "King of Sweets" - tastes yummy, very easy recipe. Great add to any festive occaion, special occasions celebrations with friends and family.

I learned this recipe from my mother who is a great cook and my father was great fan of all her dishes especially sweets and we as kids used to finish off the badushas on the day they are made ... LOL!!! Many of our festive family moments tied up with this sweet ...  And now my husband and our kids love badusha so much  .... sharing the recipe .... Try it and let me know how it tastes!

great idea but ask whyu troubleu  .... because it tases so gooduuu....



INGREDIENTS:
  • Maida - All purpose flour - 1 cup
  • Baking Soda - 0.5 spoon
  • Ghee - 2 spoons
  • Rice Flour - 2 spoons
  • Sugar - 1 cup
  • Water - 1.25 cup
  • Oil for frying
  • Elaiche powder ( cinnamon powder if you like)



PREPARaTION: Time : 20 minutes

  • Mix the all purpose flour with 1 spoon of Ghee and 1 cup of water. 
  • Keep it aside for about 10 minutes or so
  • Prepare the Sugar Syrup by adding water and sugar - you need to get a "single" string for the sugar syrup
  • Make small balls out of the dough and press them in the center

  • You could take a knife and make some fine designs 


  • You could roll the edges nicely - when you put in oil it should not open - press the edges lightly  
  • Add oil in a pan, heat and add these balls slowly into the oil
  • Occasionally stir in between and so take them out when you see the color of the rolls turning golden brown and then you can take them out
  • Add the fryed Badusha's  directly in the sugar syrup
  • Remove from Sugar syrup and serve the sweet 
  • Add cashenut/pistachi and press in the middle of the Badusha  - even for presentation it looks very nice
  • You can even try mini Badusha - basically the recipe is same just that they come in small in size

    MAMIDI RAITA ( MANGO YOGURT DISH)


    MAMIDI RAITA ( MANGO YOGURT DISH) - Article contributed by Dr M. Vineet Kumar, Hyd

    INGREDIENTS:

    • 1/4 tsp Black Mustard seeds 
    • Salt as needed
    • 1 Red Chilly flakes 
    • 1 cup Curd 
    • 1/2 tsp Sugar 
    • 2 slightly Riped Mangoes 
    • 1 tbsp Chopped Onion  
    • 1 tsp Oil 
    • 1 Green Chilli, finely cut 
    • 1 tbsp Grated fresh Coconut 
    • 1 tsp Mustard Powder 



    PREPARATION:
    • Peel and sliced the mango in small cubes.
    • Add the mustard powder, green chillies, fresh coconut, sugar and salt to the yogurt.
    • Whisk together and add to the mango cubes.
    • Stir.
    • Heat oil in the pan.
    • When hot add the mustard seeds.
    • When seeds begin to pop, add the red chilli and onion.
    • Let the onion turn brown.
    • Take off the fire and add to the curd mixture.
    • Mix well and serve at room temperature or cold.
    • Add coriander leaves.
    • Let all flavors mix together

    ALU BONDA

    INGREDIENTS:
    • FOUR TO FIVE MEDIUM SIZED POTATOS, 
    • TOMATOES
    • GREEN CHILLIES
    • OIL
    PREPARATION:
    • Boil the potatoes and PEEL THEM , 
    • ADD TOMATOES - NICELY CUT IN SMALL BITS
    • ADD GREEN CHILLIES CUT INTO FINE THIN PIECES, 
    • ADD SMALL CHOPPED ONIONS, 
    • ADD CORIANDER LEAVES FINELY CUT, 
    • ADD RED CHILLY POWDER
    • SALT REQUIRED QUANTITY
    • MIX ALL INTO FINE DOUGH , 
    • MAKE IT INTO SMALL ROUNDS, 
    • IN A VESSEL, ADD BESAN POWDER WITH SALT, CHILLY POWDER AND WATER TO MAKE INTO SEMISOLID PASTE. 
    •  NOW DIP ALU DOUGH ROUNDS IN BESAN MIX .  
    • KEEP GROUNDNUT OIL IN A KADAI HEAT WELL .
    • JUST WHEN FUMES COME, PUT ALUDOUGH BASEN ROUNDS INTO OIL AND FRY THEM TILL GOLDEN RED. 
    • REMOVE THEM AND SPREAD IN A NEWSPAPER TO ABSORB
    • EXCESS OIL.  
    EAT WHILE HOT. .  YOU CAN ALSO TRY EATING BONDAS WITH RICE AND MIX WITH VANTANOONE.  IT WILL BE SIMPLY SUPERB,  PL TRY AND LET ME KNOW.

    Garelu or Vada

    GARELU or VADA
    For any festival occasion gare or vada is offered to god in South India - Dasara, Diwali /Deepawali, Sankranthi, Ganesh Pooja, Ugadi (New Year)  .... also this is a very popular South indian Breakfast, often it is served with Sambar, Chutneys like Peanut Corriander, Ginger and or Coconut chutney. 


    I made Garelu for my boys birthday as he likes GARE so much ...

    INGREDIENTS: 
    • Urad Dal ( Mina Pappu) - 2 cups
    • Oil for frying 
    • curry leaves / corriander leaves
    • Ginger
    • Green chillies
    • Salt as per taste
    • Onions ( optional) - for festivals i do not use onions


    PREPARATION:

    • Wash the urad dal and then Soak dal in water over night
    • Remove the water and then Grind the dal in the morning, try to add as much little water as possible
    • After grinding you will need to find it to be soft as paste and add little soaked dal for texture
    • Add Ginger, Salt to the grinded dal - this is as per taste
    • Chop green chillies and curry leaves to the dal mix
    • Heat oil in a pan
    • Take small amounts of dal and make nice rounds and a hole in the middle
    • Fry till they turn golden brown in color 



    Serve hot Vada / Gare with Sambar , Peanut Corriander Chutney, Ginger Chutney and or Coconut chutney - have a fun filled breakfast or add to it to your meal and enjoy it heartily with your friends and family

    Traditional Mediterranean Falafel Recipe

    FALAFEL


    Falafel is one of the traditional Mediterranean delight, I learnt this vegetarian recipe from my colleague, this is high in protein and very easy to prepare.

    INGREDIENTS:
    • Falafel mix - 1 cup ( mix is ground chickpeas, fava beans and spices) - you can get this from any mediterranean store
    • Water - 1/2 cup
    • Olive oil - 1 spoon
    • Salad - Lettuse, Cucumber, Tomato, Onion and Carrot
    • Sause - Tomato / Yogurt / Sesame as per taste
    PREPARATION:
    • Add  water to Falafel mix, mix well and add 1 spoon of olive oil
    • Now leave the mix to stand for about 15 minutes
    • You can either fry the balls in oil till they turn golden brown or bake them ( i prefer baking)
    • If you want to Bake, Preheat the oven for about 20 minutes to 350 F
    • On the baking sheet place the small 2 inch round balls, lightly spray olive oil
    • You can either make them as balls or make them flat rounds( like pooris) 
    • Bake for about 25-30 minutes - you will see they turn into crispy balls

    Add Falafel Balls in Vegetarian Sandwich or Veggie Burgers or as stuffed Pita Bread

        Cheese Burrito


        CHEESE BURRITO 


         My little girl likes this Mexican Cheese burrito so much - kids love the cheese burrito as a snack, any time. Very easy and healthy snack for kids.
        INGREDIENTS:

        Burritos - 4
        grated Cheese 

        PREPARATION: 
        • On top of the burrito spread the grated cheese
        • Place the plate in the micro wave and warm for about 45 sec - the grated cheese will melt
        • Now roll the burrito and Serve hot 



         Kids love Cheese Burrito any time of the day - this is high in calcium and very healthy for kids.

        Yogurt Fruit Recipe



        Breakfast is the most important meal of the day as it gives you energy for the whole day.
        Nutritious, again fruits are excellent source of fiber - try this quick and healthy breakfast

        INGREDIENTS:

        • yogurt - 2 table spoons
        • fruits - grapes, strawberry, watermelon and pine apple
        • Oat meal - 4 spoons
        • Honey
        • Almonds and other nuts (optional)


        PREPARATION:



        • Cut the fruits into 0.5 cm cubes
        • Add oats to the cut fruits
        • Top it up with yogurt
        • Add almonds or nuts as you prefer
        • Add honey for taste 


        Wake up your taste buds with a healthy and delicious fruit salad for breakfast 

        Spicy Rice Pongal

        RICE PONGAL 
        This is spicy pongal recipe, there is also sweet rice pongal often made for Sankranthi / Pongal festivals - both the dishes are festival delicacies. 

        The taste is really good and those who like the taste of rice would know why this is so special in south india .... nutritious, divine and comforting food



        INGREDIENTS:

        • Rice 1.5 cup
        • Black pepper
        • Ghee - 2 spoons
        • Moong Dal 0.25 cup
        • Red Mirchie
        • Green chillies( optional ) 
        • Cashew nuts ( optional ) - i like to grind cashew nuts and mix the powder in this recipe
        • Oil and other Seasoning stuff
        • Curry leaves/corriander leaves


        PREPARATION:

        • Mix Rice and Moong dal, wash it well 
        • Add water and boil them well in pressure cooker 
        • Remove the cooked rice, moong dal and mix it well when hot
        • Add salt, chopped green chillies, seasoning stuff 
        • Add cashew nut powder 


        Server the rice pongal with spicy powder or corriander chutney / Tomato chutney or any other chutney. Some like raita/yogurt chutney with this - again tastes very well. Add urad dal papad to the rice pongal. For kids add one more spoon of ghee on top when you serve - very healthy and nutritious ...

        KAJA sweet recipe / Madatha Kaja

        KAJA sweet - this sweet is very popular in ANDHRA, it is a "Special" delicacy - it is also popularly known as "Madatha Kaja" or Layered sweet - tastes yummy, very easy recipe, When you have festivals moments, special occasions with friends and family - DO NOT forget to add this sweet dish. A good "Kaja" just melts in the mouth and taste is all in the layers of the sweet, i bet the taste will stay for few days ....

        It was my little boy 2nd birthday and i made Kaja sweet on that day- he likes sweets so much and  BTW our family name is "KAJA" too  ... it is a place near  Guntur, AP, India and is also the popular sweet name. My Father-in-law used to gift friends n family with "KAJA" sweet boxes for all Festive occasions(especially the grand kids used to like them so much ... ) .... we are continuing the same and it became our family traditional sweet dish .. sharing the "KAJA" sweet recipe ....

        INGREDIENTS:
        • Maida - All purpose flour - 1 cup
        • Baking Soda - 0.5 spoon
        • Ghee - 2 spoons
        • Rice Flour - 2 spoons
        • Sugar - 1 cup
        • Water - 1.25 cup
        • Oil for frying
        • Elaiche powder ( cinnamon powder if you like)

        • Take 2 Chapathis at a time, place one on top of the other and add little ghee in between and roll them like a mat ..
        • Take a knife and cut the roll into fine pieces about 1 cm size
        • Press the cut rolls in the center so they come out nice, long elongated
        • Add oil in a pan, heat and add these rolls slowly into the oil
        • Occasionally stir in between and so take them out when you see the color of the rolls turning golden brown and then you can take them out
        • Add the fryed KAJA rolls directly in the sugar syrup
        • Remove from Sugar syrup and serve the sweet 
        • Some even add a clove and press the kaja well so that it won't split at the ends - even for presentation it looks very nice
        • Chitti Kajas are the ones that are small in size, same recipe - cut the kaja rolls as 0.5 cm or less ...

          Baked Punugulu

          This is Andhra special snack - Punugulu 

          It was raining (not heavy) but one can feel the chill and reminds me that winter is going to start soon. Came back from work, driving home i was thinking what to make for evening snack. I remembered i had left over idly/dosa batter.and soon i made hot hot punugulu within 10 minutes and yum yum with hot chai. This is very easy recipe, tastes good.


          INGREDIENTS:
          Dosa batter
          Salt as per taste
          Fresh Ginger
          Green Chillies 1
          Onion - 1 small
          Green Corriander leaves or curry leaves
          2 spoons Rice powder
          Oil if you want to fry otherwise 1 spoon add to the batter

          For PEANUT corriander chutney:
          Peanuts
          Salt
          Red mirchi
          Corriander
          Seasoning stuff


          PREPARATION:

          • Chop the onions, chillies 
          • Add salt, ginger, curry leaves to the batter
          • Heat Oil and make small balls of the batter, leave in heated oil
          • Fry till they are golden brown
          • Prepare Peanut corriander chutney 
          Baked pungulu -
          • If you do not want to fry in oil make small balls preheat micro oven for about 10 minutes 
          • In a aluminum foiled tray put the batter balls for about 10 minutes

          Coconut Rice

          COCONUT RICE

          Dasara is one of the famous festivals in India, on Maha Navami day(9th)  Devi Saraswathi is worshipped, she sits on white lotus / white swan ... the nineth day as such symbolizes white color so thought of making White dish and thought of Coconut Rice
          INGREDIENTS

          • Basmati Rice ( long grained)  - 2 cups
          • Coconut - 2 cups
          • Cashew nuts
          • Curry leaves
          • Urad dal
          • Oil - 2 table spoons
          • Salt for taste
          • optional - Green chillies and Ginger


            Seasoning stuff - Cumin, mustard seeds, Red mirchi and Curry leaves,
          •   

          PREPARATION


          • Cook Basmati rice sepearately and allow it to cool
          • Heat Oil/Butter in a pan & season it with above mentioned stuff
          • Add Curryleaves and Cashew nuts
          • If you want to make it spicy add ginger, green chillies (optional)
          • Add salt as per taste
          • Now add coconut to the rice and mix well.




           Thai Style Coconut Rice - for Thai style you will need coconut water and use it to add to water while cooking the rice, donot add red chillies. The coconut water gives rich flavor and amazing taste.


          This is a party special, festival delicacy, quick meal, very easy recipe, healthy and tastes great with very less effort.  Serve the dish hot !!!!

          Re-discover whole wheat pita bread taste - very easy recipe, less than 10 minutes, filling and tastes yum, yum, yummy!!!!
          Ingredients:
          • 2 whole-wheat pita bread
          • 4 spoons of basil pesto
          • 1 cup of cottage cheese
          • 2 spoons of Tomatoes chopped (low fat cottage cheese)
          • 2 teaspoons of fresh basil chopped
          • 2 table spoons of fresh capscicum ( red, yellow, green peppers ) chopped
          • 2 tablespoons of onions chopped


          Serve hot and fresh, again great filling recipe, tastes yummy - less than 10 minutes it is ready!

          Preparation:
          1. Toast the pita bread until crispy and firm
          2. Spread the pesto on each pita bread.
          3. Spread the paneer evenly over each pita.
          4. Top with nicely chopped tomato, fresh basil, onions and peppers

          Pani Puri


           

           
           
          PANI PURI
          Its snack time!!!!!! Pani puri - You get to cook a variety of mouth watering dishes but the best of all which is every one's favourite is Snacks and if its Pani Puri, tell me who isn't ready?
           
           
          My kids love Pani puri and it is one of our family favorite snack ... any time of the day we are ready to have Gol Gappe .... This is an easy recipe and tastes so yummy and is filling
           
          INGREDIENTS:

           
          • Sooji  / Bomabay Rava 1 cup 
          • 3 tblsp Fine Wheat Flour (Maida)
          • 1/4 tsp Baking Soda
          • Oil to deep fry
          PANI
          • 0.5 cup Tamarind Water
          • 1.5 cups Water
          • Cumin Seed (Jeera) powder fresh - 1.5 tablespoon
          • Mint Chutney - 1.5 table spoon
          • Salt and Amchoor for taste

           
          PREPARATION:

          • Add sooji, maida, baking soda, salt and enough water. Mix well so you have a soft dough.
          • Leave the dough for about 15 minutes
          • Make small sized balls and roll them into small pooris
          • Heat oil in a pan, add the pooris to the oil ...fry them till them turn to light brown and crisp.
          • Add pudina chutney and other pani ingredients 

          Serve Puri and Pani - You can increase the spice as per you liking !!!! Also you could add potatoes and chick peas - it goes very well with spicy pani and puri!!!
            

          Stuffed Spicy Mirchi / Stuffed Chilli

          Stuffed Spicy Mirchi 

          The other day it was raining and in the night for dinner, i felt like eating something spicy, looked at the veggies and found nice green mirchi and thought of whether to make bajji or stuffed spicy mirchi and finally Spicy Mirchi wins .... it was good deal!!!!!


          Ingredients  

          • 1 table spoon oil
          • 6 to 8 long thick green chillies
          • 1 tablespoon mustard seeds
          • a pinch heeng (asofetida)
          • 1/2 cup of yogurt / butter milk - some use instead of butter milk lime juice/amchoor powder i prefer butter milk
          For stuffing:
          • 1/2 cup gram flour (besan)
          • 2 tsp Amchoor powder
          • 1 tsp turmeric powder
          • 4 tbsp oil(approx.)
          • Salt to taste
          Preparation 

          Here in USA we get all veggies throughout the year, and easily available in all stores and one of the many reasons to cook to what we like all the time ....


          • Make a slit in all the chillis and remove the seeds
          • Bake the chillis for 4 minutes
          • Prepare the stuffing - grind the besan, add salt to it
          • Stuff the gram flour mixture into chillies tightly




          • Heat pan, add 1 table spoon of oil and add the chillies
          • Close the lid and reduce the heat and cook on low heat for  7/8  minutes - turn the chillies in between


          • After you see that the chillies are fryed enough, add 1/2 cup of yogurt and leave it for 5 more minutes 
          • Add the remaining  gram flour to the chillies - if you like more gravy you could add more gram flour to the chillies other than the stuffing

          If you use yogurt the stuffed mirchi will be little wet and will consume less oil, obviously less calories.

          Blue Berry Vanilla Cake


          BLUE BERRY VANILLA CAKE
          Vanilla Cake topped with fresh blue berries

          Ingredients

          • 1/2 cup white sugar
          • 1.5 tablespoons cornstarch
          • 1/2 teaspoon ground cinnamon
          • 4 cups fresh blueberries
          • vanilla cake mix 1 cup
          • 1 tablespoon butter

          Preparation

          • Preheat oven to 425 degrees F (220 degrees C).
          • Mix sugar, cornstarch, cinnamon, butter and vanilla Cake mix
          • Bake cake on lower shelf of oven for about 25 minutes, or until crust is golden brown.
          • In the food processor grind the fresh blueberries. 
          • Top the cake with the fresh blue berries, tastes yummy

          Rava Kesari


          RAVA KESARI
          Rava Kesari is a very popular south indian sweet dish - very easy to prepare. Not only this is a festival dish but also for every occasion.
           

          INGREDIENTS

          • Bombay Rava (Sooji) - 1 cup.
          • Sugar - 2 cups.
          • Ghee - 1 cup.
          • Cardamom powder - 1 tsp.
          • Water 2 cups
          • Cashew nuts / Almonds / Raisins

            PREPARATION
            • Add rava and 1 table spoon of ghee and fry the rava till the smell of the rava goes away
            • Tke 2 cups of water and boil and add sugar to it
            • Add Roasted rava and let it boil for about 7 to 8 minutes
            • Stir well and to this now add ghee in small quantities and stir well till the mixture becomes solid.
            • Add Cardomom powder, chopped cashew nuts and other nuts

          Goru Chikkudu Kaya Kura / Cluster Beans Curry



           GORU CHIKKUDU KAYA KURA

          INGREDIENTS

          • Fresh Goru Chikkudi kaya / Cluster Beans
          • Urad Dal
          • Fresh Coconut powder
          • Fresh Ginger
          • Oil - 2 tablespoons
          • Onions - 1 medium
          • Salt as per taste
          • Red chillies, Turmeric powder, Mustard seeds, Cumin seeds(jeera), Curry Leaves for seasoning






          PREPARATION





          • Cut Cluster beans into 2 to 2.5 m long pieces and chop onions into small pieces
          • Bake the cut beans for about 7 minutes
          • Heat oil in a pan, season red chillies, mustard , cumin seeds
          • Add chopped onions, ginger paste, salt  to the oil and leave for about 2/3 minutes
          • Add the cut beans to the onions, ginger paste
          • Stir fry till the beans turn to slight golden brown

          Serve Goru Chikkudu Kaya hot with hot steamed rice. Slightly different version of this curry is where you soak chana dal , grind the chana dal and add that to Goru chikkudu. that tastes very good too.

          Thai Pepper Fried Rice



          Thai PEPPER FRIED RICE

          Very easy, colourful & tasty recipe



          Ingredients
          • Veggies - Fresh Peppers – Red, Green, Yellow and Green Onions
          • Oil - 2 tablespoons 
          • Salt as per taste
          • long grained rice 2 cups ( Basmati)
          • Pepper as per paste

          Preparation

          • Cut the Green, Yellow and Red Peppers into 1 to 1.5 cm pieces
          • Chop Green onions
          • Cook Rice ( long grained) and keep it aside
          • Heat oil in a large pan and add cut peppers into it
          • Put a lid on top of the pan and leave for 3 minutes till all the peppers are slightly soft
          • Add cut green onions to the peppers
          • After 2 minutes add cooked rice
          • Add salt and pepper as per taste 
          • Serve the Pepper Fried Rice hot with hot n sweet sauce




            
          Serve Pepper Friend Rice hot with "hot n sweet tomato sauce"
