Coconut Chutney ( Kobbera Pacchadi)




Coconut chutney



Ingredients:



  • Kobbera - Coconut scraped from fresh coconut tastes really good
  • Green Chillies
  • Oil for seasoning
  • Ginger
  • Onions
  • Salt for taste 



Preparation:

  • Heat the pan, add one spoon of oil, and add onions, ginger, greenchillis  and stir fry for about 3 minutes
  • Grind ginger, onions and greenchillis
  • Grind the Cocunut grated – add little water for fine grinding
  • Mix the onion, GreenChilli, ginger paste and Add little water to the paste


Seasoning:

  • Take 1 spoon of oil, add to the heated pan ….
  • Add cumin seeds, zeera and curry leaves.

Coconut chutney – this chutney served with Dosas, Vada, Upma, Pessarattu , Uttapam etc.

Ingredients: Cocount powder grated, Cilantro, Ginger, Onions, Green Chillis, 1 spoon of oil

Gongura Chutney



Ingredients: gongura leaves, Cilantro, Ginger, Onions, Red Chillis, 1 spoon of oil

Preparation:
Step1 Heat the pan, add one spoon of oil, and add onions, ginger and stir fry for about 3 minutes
Step 2 Grind ginger, onions to a fine paste
Step 4  Heat the pan and fry the Cilantro and gongura leaves till the leaves are moist.
Step 3  Heat the pan and fry the Red chilis and grind red chilis and keep it separately



Step 5 Grind the Gongura and Cilantro leaves
Step 6 Mix the Gongura paste, onion ginger paste, Red chilli paste, Add little water to the paste

Seasoning:
Step 7 Take 1 spoon of oil, add to the heated pan ….
Add cumin seeds, zeera and curry leaves.

This chutney goes with Hot Rice or Roti 

Tomato Chutney



Ingredients: Tomatoes ( 3 big) Cilantro, Ginger, Onions(1), Green Chillis (6), 1 spoon of oil

Preparation:

  • Heat the pan, add one spoon of oil, and add onions, ginger, greenchillis  and stir fry for about 3 minutes
  • Grind ginger, onions and greenchillis to a fine paste
  • Heat the pan and just fry the Tomatoes now for about 4 minutes
  • Grind the Tomatoes
  • Mix the Cilantro with the Tomatoes, onion, GreenChilli paste.

Seasoning:

  • Take 1 spoon of oil, add to the heated pan ….
  • Add cumin seeds, zeera and curry leaves.

This would go on top of the Tomato chutney – this chutney goes with all Tiffins, Idli, Dosa, Upma, Vada, Attu, Uttapam etc

Yogurt Chutney

Yogurt is great for the immune system and helps to fight harmful toxins in the body. Apart from that it contains calcium, protein, riboflavin and vitamin B 12 and is low in fat. So I try to include yogurt or curd in one form or the other in the daily diet of my family. One of the dishes I make using curd is the curd chutney also known as yogurt chatni or dahi chutney. This yummy recipe goes well with dosa, idli, roti, chapathi and poori.



 Ingredients :


  • Vegetables:  Carrot, Onion, Cucumber and Cabbage
  • Yogurt - 2 cups ( beaten well for chutney) 
  • Salt and Lemon juice for taste
  • Curry leaves and corriander leaves
  • Seasoning stuff 
  • 1 pinch black pepper
  • 1 tsp Dry roasted and powdered cumin seeds 

 Preparation :

  • Finely chop onions, carrot, cucumber, cabbage and corriander leaves.
  • To the well beaten yogurt add the vegetables
  • Add 1 tsp of grounded black pepper 
  • Add pinch of Salt to taste. 
  • Seasoning: 
    Heat oil in a pan




  

Mix yogurt and all the seasoned ingredients in a bowl and mix well. 

 


Serve Yogurt Chutney chilled. This yummy recipe goes well with dosa, idli, roti, chapathi and poori.

Cabbage Pickle

Prepartion:
  • Finely chop cabbage into small pieces 1 to 2cm in size.
Seasoning: 
  • Heat oil in a pan 
  • Add mustard seeds, cumin seeds, urad, chana dal and hing to oil 
  • Add curry leaves
  • Add seasoning stuff to the cut cabbage pieces
  • Add Salt and Lemon juice for taste

Cabbage Pickle is very easy to make and tastes very good with poori / chapathi / roti.

  • Vegetables:  Cabbage and Green chillies 
  • Salt and Lemon juice for taste
  • Curry leaves and corriander leaves
  • Seasoning stuff 
  • 1 pinch black pepper
  • 1 tsp Dry roasted and powdered cumin seeds ( for yogurt chutney)

 Preparation :

Finely chop cabbage, green chillies and corriander leaves into small pieces 1 to 2cm in size.


Seasoning: 
Heat oil in a pan





Add cabbage, curryleaves to onions and add a pinch of salt for taste.

 


  • Now Add curry leaves
  • Add seasoning stuff to the cut cabbage pieces
  • Add Salt and Lemon juice for taste
